If you live in New York City, you're used to seeing restaurant grades posted prominently by the entrance -- each restaurant is assigned a letter grade of A, B, or C depending on how well they do upon inspection. New Yorkers are always hoping that their favorite restaurants get a grade of A, because, with anything less, you're risking it. The same is true with flowers, except there are five grades: "Select," "Fancy," "A," "B," and "C." Flower head size, petal count, length of stem, straightness, color, and minute flaws, among other variables, are judged and graded, with each stem falling into one of five categories. If you ever visit a professional flower farm, you will see the grading painstakingly taking place in the post production facility. Most people who buy flowers have no idea about flower grading...unlike New York City restaurants, grades are never posted on flower packaging and there is no requirement to do so. Only floral insiders know what I am sharing with you now. 

As you might expect, flower grading affects pricing. Expect to see "Select" flowers at places like Buckingham Palace, The White House, and the most expensive hotels in the world. "Fancy" is what you might see at a premium florist who specializes in large, costly events like weddings. "A" is what you might see at a local florist. "B and C" grade flowers are what you can expect at your local grocery store.
